Tempeh Taco Salad

Serves: 4 

Ingredients	Qty	Prep
Crispy tempeh
Taco seasoning
Cilantro Avocado Dressing
Assorted greens
Corn	2 cups or more
Black beans	3/4 cup dry	1 can
Cherry tomatoes	1 box	chopped
Black olives	7 - 10	chopped
Tortilla chips	as needed
Pepitas	2 - 4 tbsp

Method:

• Char corn lightly with little oil in cast iron skillet for a few minutes. 
• Toast pepitas for a couple of minutes.Toss salad green, beans, corn, pepitas, olives, and dressing together
• Top with tempeh, tortilla chips and more dressing if desired
