Tempeh Taco Salad

Serves: 4 
Roasted Tempeh
Taco seasoning
Cilantro Avocado Dressing
Assorted greens
Corn1 cup or more
Black beans1 can (400g)
Cherry tomatoes1 boxchopped
Black olives7 - 10chopped
Tortilla chipsas needed
Pepitas2 - 4 tbsp

  1. Make roasted tempeh about an hour ahead of making the salad. Add taco seasoning to standard marinade
  2. On a baking sheet, spread the tempeh and corn. Cook for 10 minutes at 400F
  3. Flip the tempeh pieces after 10 minutes and now add pepitas
  4. Remove from oven after 5 - 7 minutes, pick out tempeh pieces and put aside
  5. Toss salad green, beans, corn, pepitas, olives, and dressing together
  6. Top with tempeh, tortilla chips and more dressing if desired
