One Pot Tomato Pasta

Serves: 4  
Calories: 600/serving
Pasta1 lbpenne, fusili
Eggplant6 Indianchopped
Mushroom1 lbsliced
Soy milk2 cups
Stock2 tsp
Onion1 largechopped
Garlic3 clovesminced
Red chili flakesto taste
Water100 ml + 2 cupsmore if needed
Soy sauce4 tbsp
Diced tomatoes15 ozpetite 
Tomato paste3 - 4 tbsphalf 6 oz can
Tomatoes2 mediumchopped
Maple syrup1 tbsp
Basil1 - 2 tspdry
Pepperto taste
  • Fry onion and garlic in oil with chili flakes for few minutes
  • Add mushrooms, eggplant, maple syrup, and soy sauce
  • Once vegetables are cooked, add tomato products
  • Stir well and cook until tomatoes break down
  • Add milk, stock, pasta, and enough water to submerge pasta fully
  • Stir occasionally to keep from sticking and cook until pasta is completely done
  • Add basil and pepper to taste and serve hot
