One Pot Tomato Pasta

Pasta1 lbpenne, fusili
Eggplant6 Indianchopped
Mushroom1 lbsliced
Soy milk2 cups
Stock2 tsp
Onion1 largechopped
Garlic3 clovesminced
Red chili flakesto taste
Water100 ml + 2 cupsmore if needed
Soy sauce4 tbsp
Diced tomatoes15 ozpetite 
Tomato paste3 - 4 tbsphalf 6 oz can
Tomatoes2 mediumchopped
Maple syrup1 tbsp
Basil1 - 2 tspdry
Pepperto taste

Method:
  1. Fry onion and garlic in oil with chili flakes for few minutes
  2. Add mushrooms, eggplant, maple syrup, and soy sauce
  3. Once vegetables are cooked, add tomato products
  4. Stir well and cook until tomatoes break down
  5. Add milk, stock, pasta, and enough water to submerge pasta fully
  6. Stir occasionally to keep from sticking and cook until pasta is completely done
  7. Add basil and pepper to taste and serve hot
