Breakfast Tacos

Mushrooms5 ozchopped
Red onion1 largejulienne
Green pepper1 largejulienne
Tomato salsaas needed
Saltto taste
Pepperto taste
Habanero sauceto taste
Taco sauceto taste
Cumin powderas needed
Garlic powderas needed

  • Make salsa as per recipe
  • Fry mushrooms until browned, add habanero sauce after turning off heat, set aside
  • In the same pan, fry onion and pepper with cumin powder, garlic powder, and little salt
  • Take off heat while still crunchy, set aside
  • In the same pan, heat oil on medium-low
  • Whisk eggs with salt and pepper until well combined
  • Pour eggs into pan, fold and mix until eggs are done
  • Assemble tacos and serve with chips
Recipe pairs well with mushroom carbonara. Just use the 5 egg whites with 2 whole eggs for scramble.
