Method:
Make salsa as per recipe Fry mushrooms until browned, add habanero sauce after turning off heat, set aside In the same pan, fry onion and pepper with cumin powder, garlic powder, and little salt Take off heat while still crunchy, set aside In the same pan, heat oil on medium-low Whisk eggs with salt and pepper until well combined Pour eggs into pan, fold and mix until eggs are done Assemble tacos and serve with chips
Notes:
Recipe pairs well with mushroom carbonara. Just use the 5 egg whites with 2 whole eggs for scramble.
